Cheesy Potato Tarts
3-4 servings of instant mashed potatoes
2 tbsp sour cream
1 1/2 tsp chives
1 1/2 – 2 cups shredded Monterrey Jack cheese (divided)
1 1/2 tsp bacon bits (optional)
1 pkg frozen mini tart or quiche shells
Prepare tart shells according to package directions. Prepare instant mash potatoes according to package directions for creamier version. Set aside about 1/4 cup cheese. Add in the sour cream, chives, remaining cheese, and bacon bits. Mix until just combined. Fill each shell with potato mixture. Take the 1/4 cup cheese set aside earlier and sprinkle on top of filled shells. Bake at 350 degrees for about 10-15 minutes, until cheese melts.
Easy Chicken and Rice Canapes
1 can condensed chicken and rice soup 1 pkg stuffing mix for chicken (about 6 servings)
2 cans buttermilk biscuits Preheat oven according to biscuit directions.
Prepare stuffing mix according to package directions. Combine prepared stuffing mix and soup. Open cans of biscuits and separate each. Press one biscuit into each cup of a muffin pan, forming a cup in each. Fill each biscuit cup with stuffing mixture. Bake according to biscuit directions.
Remember that appetizers don’t have to be fancy or take hours to prepare inorder to be a party goer’s favorite dish. Consider using things you have in your pantry and fridge mixed with a bit of creativity. You’ll be amazed at the things you can create that will soon become your new party staples.
